Disney gets a bad rap sometimes, but I still love their animated movies.
On the whole, Beauty and the Beast is my favorite. Gaston is a great villain, the songs are wonderful, Belle is one of the best Disney leads. I love the contrasting that goes on between Gaston and Beast; it gives the film more depth than Disney was usually known for. Also, it's just a really entertaining movie and it's short enough that it doesn't drag.
Hunchback is my choice for second place, for reasons you mentioned. I would say it's number one, but the Gargoyles drag it down a lot (I know it's a cliche reason, but they just do: they exist only for marketing purposes and completely distract from the film's tone). The "Hellfire" sequence is perhaps the greatest moment in a Disney film? Well, maybe not, but it's close.
Third place is a little sketchier. Lady and the Tramp? Yeah, I'll just go with it.
As far as "fun" Disney movies go, I like Aladdin, Tangled, and Wreck-It Ralph about equally. I don't think they reach the heights of the above two. I'm not a huge fan of Disney movies pre-90s, but they are for the most part at least above average quality.
