Most of the time, your $ either need to come from stop cards, or for the cantrip $ (Market/&c.) you need to buy a lot of engine components on top of your +cards/+actions, because they cost ~$5 and add ~$1 to your total spending power. (Conspirator and Peddler are notable exceptions). Bazaar costs $5 and doesn't let you save money between turns, and Fishing Village only draws half a card, so you're more likely to get it without the +cards.

In a Plaza deck you only need to keep a few Treasures around, which you already had anyway, and then your village also provides economy. That means fewer components to add after your draw engine is built.

This is a little misleading, the Plaza discard means you need to draw some treasures twice to get a real boost in total spending power, which means your deck needs more draw cards (or decent trashing). Of course you get some boost just from being able to store up coin tokens, using only what you need to make your purchase that turn. But Plaza decks that want to discard a lot of treasures every turn will need to be trashed down or have a lot of draw.

It might be worth mentioning that Plaza is nice with Potions, since Plazas can discard obsolete or inconvenient Potions for coin tokens.

Edit:  And for that matter, Plaza can also get some extra mileage out of Contraband, or even a Loan or Venture which you'd rather not play.

Apothecary is a nice synergy with Plaza, you can discard the Coppers before the reshuffle and then draw them again. Additionally, Apothecary is a potion cost card which already is good with Plaza.
