This is kindof a bigger rules question so I thought I'd ask it here. If we "hold" our turn in combat can we "interrupt" another character's turn? For instance if someone had held their turn when Sam popped out of cover to shoot at Bob could they have taken an uncovered shot at Sam before he returned to the dust cloud?

Yes, with caveat.  You can try to interrupt someone's turn by making an opposed Agility roll.  Whoever rolls higher goes first.  (i.e. if you get higher you go before he returns to the dust, if he rolls higher he returns before you get your shot off.

That's fair, it gives more reason to put points into Agility also.

That was the only way the narration of the latest events and the map made sense to me. Allright, I'll get to my action. Shooting at O4, what would I roll? Shooting, I guess?

You got it.  You've still got control of Danny if you want to take his shots as well.  It's his last set of shots before reloading...maybe he'll finally hit something :)

I'm thinking about taking an agility roll to try to get off my shot at Sam before he either starts healing of shoots me first. Is there any down side to this anyone can see? Or does that only work for interruptung our own teammates???

I think Sam goes before you, and I don't know if anything you do will let you go before him this round due to the initiative draws. I think only Cliff and Amanda had the possibility of interrupting Sam this round, and now only Amanda could.

That's correct.  The ability to interrupt requires you to be on Hold, which specifically means that you've opted to wait to execute your turn until later.  (you can do this any time you want to act later in a round, or even if you want to act earlier in the next round for some reason or other.).

It's okay, it's a fine line to tread at times.

At this point, everyone is unfamiliar enough with the rules that I expect and am fine with rules questions.  So, a better way to phrase it would be: "Is there a rule I'm missing that makes this a bad idea?"
The way you asked left it a bit open for people to give you strategic reasons why it was a bad idea.

Anyways, unlike in say Pandemic, getting too much strategic help here is considered meta-gaming, and kind of outside the spirit of the game.  But, as I said, you're also all learning the rules.  So, please everyone feel free to ask input of the sort, "what am I allowed to do here?" or "what options are available" or "Can I do X?".  Just not, "what should I do" or "should I do X".  The first is getting more information about the system, the second is getting advice.  Of course, with everyone new I'll probably put a little general advice with the rules when I give them.

Normal
Hit
Shaken
Incapacitated
Dead

Is that right?  Like, is Sam dead if we hit him again?

Sam Bass is dead.  (hence the ripping out his throat :) )

Levels of Hurt for Extras:
Normal
Shaken
Incapacitated.  (end of combat, or if needed they get a vigor roll to check if they're alive).

Levels of Hurt for Wild Cards:
Normal
Shaken
Wounded (-1, -2, -3) (can also be shaken or not)
Incapacitated.  (Always not conscious.  Either stable, bleeding out, or dead (see here: http://www.peginc.com/freebies/SWcore/SWDUpdates_DamageAndHealing.pdf)

You can always perform a finishing move on a helpless opponent (in particular Incapacitated characters are helpless).  You must be armed with some lethal weapon and adjacent; it takes an action, and automatically kills them.
