Fell behind on Quarry/Market board

I had no idea what to do here.  My thought was to buy Apprentices to trim my deck and get rid of Victory Cards so my opponent's Fortune Teller wouldn't hurt.  But I had really shitty shuffle luck and by the time my deck got going I was already down several Provinces.

First, I'm not sure why you didn't open FT/Quarry.

Second, if your priority is to get Apprentice into Markets, then get Apprentice into Markets! Don't get a Gold. On turn 5, get a Quarry with $4 instead of Silver. If you had bought Apprentice over Gold on turn 3, you would have been able to trash Estates on turns 6 and 7 and bought 2 Markets instead of 2 Apprentices.

You really don't need that many Apprentices in this sort of deck. You want the first one to get rid of Estates and improve cycling. You don't want to pick up a second one until much later because they are far easier to pick up once you can collide your Markets with your Quarries. You picked up your 4th (!) Apprentice on turn 10, but you could just as easily at that point have 1 Apprentice and 5 Markets, if not better.

My personal belief is that the fortune teller is more damaging if you have one or two victory cards in your deck, compared to having 3 or 4 victory cards in your deck. The shuffle maths looks complicated so I'm not going to try to prove that however. Anyway, my conclusion would be that unless you are removing every victory card from your deck, you are gaining no extra protection by trashing any victory cards. This is quite different from defending against rabble and bureaucrat.

Is market/quarry even good? It seems like Embassy BM should be much faster.

It is also a Duke board (not that either really went Duke here) so I think Apprentice into Market with Quarry is good here though on a straight Province board I might play Monument into Embassy BM.
