There are times when you want two, I've found, both to get Alchs more quickly and to help set up the stack (by increasing the likelihood of finding a Potion when you still don't have many Alchs yet).

I don't claim to be an expert, but if I think Alchemist is going to be a key card, I will almost always pick up a second potion right away to win the split as well as keep the stack going, and it seems to have done me pretty well. When I do lose Alchemist games, it's because I either overestimated or underestimated how good they were for the set, not because I get out-Alchemist'd.

Another Goko one, but... sometimes, even when it probably isn't optimal, you feel compelled to ruin someone's day with a pin. Even if that someone is a bot.

And sometimes, just to rub salt in the wounds, you decide to end it by getting your Golfer achievement.

...spin-offs are still better for all of the previously cited reasons.
But not strictly better, because the spinoff can have a different cost than the expansion.

Trashing Provinces for no immediate gain is one of my favorite moves.

Quote
(Davio draws: 2 Provinces, an Upgrade, and 2 Golds.)
...
— Davio's turn 19 —
   Davio plays an Upgrade.
... drawing 1 card and getting +1 action.
   ... trashing a Province.
   ... gaining nothing.
Davio plays 2 Golds and a Silver.
   Davio buys a Province.

All Provinces are gone.
Davio wins!

And I know from experience that you love trashing them for IMMEDIATE gain even more.

I call this one "I Need a Better Poker Face".

http://dominion.isotropic.org/gamelog/201212/28/game-20121228-161424-96188fc8.html

Ambassador, Apothecary, Chapel, Embargo, Haven, Peddler, Royal Seal, Stash, Treasure Map, Wharf.

I opened Treasure Map/Chapel. My opponent opened Potion/Ambassador, and tried for Treasure Maps later.

I hit the jackpot early, got a province, then started investing in Wharves. Meanwhile, my opponent couldn't get his Treasure Maps to collide. So he gave up, and Ambassadored his two Treasure Maps over to me.

Check out what happened at my turn 15 (opponent's name censored):

Quote
   — TrojH's turn 15 —
   TrojH plays a Wharf.
... drawing 2 cards and getting +1 buy.
TrojH plays a Silver, 2 Coppers, and a Gold.
   TrojH buys a Duchy.
   TrojH buys a Haven.
(TrojH draws: 2 Treasure Maps, a Province, a Silver, and a Copper.)

— XXX's turn 16 —
XXX resigns from the game.

Emphasis mine. I got both of his Treasure Maps in my hand at the same time, but before I could cash them in, my opponent resigned.

I need a better poker face. My face is so easy to read, my opponent can read it through the internet.  ;)

There have been games when I had 4 to make really sure there is no disconnection of the chain after a familiar slog and when I had to recover via conspirators from losing the split.

Let's end this with a magnificent misclick :
http://dominion.isotropic.org/gamelog/201212/31/game-20121231-050342-f93c9dce.html

— ChocophileBenj's turn 12 —
ChocophileBenj plays a King's Court.
... and plays an Ambassador.

Not this one !

— ChocophileBenj's turn 15 —
ChocophileBenj plays an Ambassador.
... ChocophileBenj reveals a King's Court.

Here it is ! I wanted of course to play in the reversal order... I even had some estates in hand !
He eventually lost by taking a while to play (i didn't boot him !)

Chocolate is like victory points in Dominion. Both taste good but they'll hurt you if you eat too much of it instead of something else in your early days.
