Is a Spy strategy worth it in this set?

I skipped the Spies, relying on a single Smithy and Stables to boost my draw.  I was able to get to King's Court fairly quickly, but my opponent (after wasting a lot of turns buying Spies) managed to rush past me and win.  Should I skip buying the Smithy and instead buy an early Woodcutter for the +buy?  What when wrong?

The smithy isn't the right starting point for a deck with jesters, stables, then king's courts. The woodcutter would have been better and a deck of stables, woodcutter, and fool's gold might be able to compete with a jester/king's court deck.

Your opponent has way too many spies and did not deserve to get a KC as early as he did. That said, your turn 5 silver buy is a mistake and should be a spy. You get KC alone twice in the game.

You want the +Buy on the Woodcutter to get FG quicker, yes?

Yes some of the better fool's gold partners have +buy; wharf, nomad camp, spice merchant.
