...that when you have a Prince out, it doesn't count as a unique card for Horn of Plenty (log)

Prince is not in play. It is in set-aside land until the end of the game.

Though you can play Prince to activate Horn of Plenty (or Peddler, etc), if you choose not to set it aside when you play it.
