Hi all, need some help with trashing cards. Is trashing cards only possible due to cards like chapel/remodel or can you use an action to trash a card?

The first one. You can't just trash a card whenever you want. You can only trash a card as a result of an instruction on some card telling you, or allowing you, to do so.

here is a quick list of cards that trash. (holy cow, there are more than i would have guessed coming into this...)
apprentice
bishop
chapel
develop
expand
forge
governor
jack of all trades
loan
lookout
masquerade
mine
moneylender
remake
remodel
salvager
spice merchant
steward
trade route
trader
trading post
transmute
upgrade
you can break those down into a few categories too if you are feeling crazy. straight trashing, trashing for money this turn, and trashing to improve that card. a few other cards may incorporate trashing in their play: embargo, farmland, feast, fool's gold, horn of plenty, mint, pirate ship, saboteur, swindler, thief, treasure map, and watchtower.

greatexpectations posted a nice long list, but since I'm guessing you're just getting started with Dominion (based on your question), I'll point out just the cards in the base set that trash cards:
Chapel: trashes up to 4 cards from your hand
Feast: Trashes itself only
Moneylender: Trashes a copper from your hand
Remodel: Trashes a card from your hand
Thief: MIGHT trash one treasure from the opponent's deck when you play it
Mine: Trashes a treasure from your hand (Gaining you a better one instead!)
These are the only cards in the base set that trash cards.
