The real problem, as I see it, is acquiring those apothecaries without disrupting the rest of your game. If you can pick up a decent amount from time to time, sure, they are a help, but with vault guaranteeing you a gold, when choosing between an apothecary and a gold I'd usually opt for a gold (or a vault).
