I played this war game as a kid with modular setup, plastic castles and trees, and cannons, ballistae, and catapults that fired plastic orange balls to knock over your opponent's men and hit their castle's targets.

well, its a bit like Crossbows and Catapults, but not exactly. But probably good to start there and work onwards.
