It depends whether you're going to divert from Apothecary.
If you're using Apo to get expensive cards early, you'll like not want the Copper.
If you're just going to use Apo and not much else, well, you could even open Potion/Copper.

What you have to figure out with Apo is how to deal with the junk that's being left on your deck.
If your next hand is 3 Estates, 1 Copper and 1 Apothecary, it's going to be hard to draw them all with your Apothecary chain.

Now which card has the power to draw that useless Victory cards? Scout, of course! :)
By mid/endgame you can often hit a wall of greens during your turn and if there's no way to deal with this, you likely won't hit $8.

But something like Council Room, Wharf or Margrave is also nice as a "finisher" for the +Buy and the card draw.

I normally use Apo as support instead of my main money-making method, but if you need the eighth Copper it's obviously pretty important to also have filtering and/or trashing support ready.  I guess when you have all the parts of the engine in place, then getting the Copper is less likely to interfere with your flow, so you can safely go for it?  Or if you have a spare buy/dead turn, you can always get it late with no penalty.  I also have a (possibly ill-guided) rule of thumb about making sure I have 3-4 Apos before getting more Copper.  Big exceptions for me include Bishop and Native Village/Apo boards.  I usually get Copper #8 very early for those types of decks. 

As for going beyond 8... man, I don't think I ever do it purposefully.  Not unless I'm playing with IGG, although the Curses really interfere with Apo in that case.

I usually use it to accelerate into some other strategy, so I don't.
