Recomendations for easy to learn games?

My wife and I were crazy for Dominion for about a year mostly because its such a simple to understand and fast paced game. We kept to the first few expansions since she doesn't care for the complexity the later ones add. Do you fellow Dominion players have any recommendations for games around Dominion's complexity level that a non-gamer like my wife might like?

My wife and I enjoy Kingdom Builder a lot.

Citadels is pretty good.

Hanabi is tons of fun. I can also confirm that Citadels and Splendor are good games and easy to learn.

I've had a lot of success teaching Splendor and Hanabi to non-gamers. Also Lanterns.

Escape: The Curse of the Temple has always been a hit for me with non-gamers. It's quick to learn, quick to play and usually leaves people wanting more.

If you aren't familar with it, it's a co-op game against a time limit, about rolling dice and strategically moving around to do stuff and escape a cursed temple. The basic game is, I would say, probably simpler to learn and understand than something like Hanabi.

...spin-offs are still better for all of the previously cited reasons.
But not strictly better, because the spinoff can have a different cost than the expansion.

Carcassone hasn't been mentioned yet I see.  Favor of the Pharaoh is quite easy.  Century Spice Road when you get bored of Splendor.  Jaipur if you're looking for 2-player specifically.  Patchwork, also just for 2.

If you like Deck Builders, Star Realms is a fast paced, easy to learn, and cheap to buy option.  Me and my wife love it.  There are also a couple decent expansions if you like it.
