Out of the blocks

I'm pretty sure the strongest strategy on this board is:
Turn 1: Plan on Gear.
Turns 2-4: Buy Gear and trash Estate.
Turns 5-6: Buy Gold.  (It's possible that you need to buy Gold on turn 3 or 4 and the third Gear on turn 5.)
Turns 7+: Buy Province when able, buy a third Gold on the first miss.
I tested this out and consistently got 5 Provinces by turn 12.  After that, the deck starts to falter, but you can go in for Duchies or save up for Provinces depending on the game state.  The engine can't slow this down (Pirate Ship is too slow), and isn't strong enough to compete.

Triggered that shuffle?!

I think you win regardless of whether you trigger that shuffle.  You're correct that you should have spent one more turn trashing 3 Coppers with Count; it would have greatly increased the likelihood that you can pair your Legionary and Gold.

The lost Universities

I don't think it's realistic to expect University to help you win a key $5 split.  Potion + University x2 is three buys, so you need more than three gains with those Universities before the pile empties to come out ahead.  But it's actually worse for a couple reasons: (1) You're almost certainly not hitting $5 on an early turn when you play University, and (2) you'll get your first copy of the key card later, and those key cards (Minion in this case) help you to get more copies.

I had not thought about Gear and money at all that game! It does seem better than what either of us did.

Ah, I see, Minion was quite central and the early Universities can't make up ground fast enough. I will bear this in mind when faced with buying University or not.
