Are the on-line cards and/or remaining spoilers only going to be available when the physical product ships, or is there an official "release date" that's going to flip that switch regardless of whether delays hold up the manufacturing/shipping? I had a hard time finding that information in the other threads.

The cards will be available to play online when the physical set is in stores. There's no hard date for that, and if the physical release is pushed back, the online release will be too.
There may be more spoilers before that if Rio Grande Games posts the rules document to its website early, but I wouldn't count on that happening. You may have to wait until somebody buys the set and posts the remaining card texts.
